How to Make Sambal Terasi

Here's a step-by-step guide on how to make Sambal Terasi, a spicy Indonesian condiment made with chili peppers and shrimp paste:

Ingredients:

- 10-15 red chili peppers (adjust according to your desired level of spiciness)

- 3 cloves of garlic

- 1 small tomato

- 1 teaspoon shrimp paste (terasi)

- 1 teaspoon sugar

- Salt to taste

- Lime juice (optional)

Instructions:

1. Prepare the Ingredients:

   - Wash the chili peppers, remove the stems, and cut them into smaller pieces.

   - Peel and roughly chop the garlic cloves.

   - Dice the tomato into small pieces.

2. Roast the Shrimp Paste:

   - Wrap the shrimp paste (terasi) in a small piece of aluminum foil.

   - Roast the wrapped shrimp paste on a dry pan over low heat for a few minutes until it becomes                 fragrant. This step helps to reduce the pungent smell of the shrimp paste.

3. Blend the Ingredients:

   - In a blender or food processor, combine the chili peppers, garlic, roasted shrimp paste, and diced         tomato.

   - Blend until you get a smooth paste. If needed, you can add a little water to help with the blending         process.

4. Cook the Sambal:

   - In a pan, heat a tablespoon of oil over medium heat.

   - Add the blended mixture to the pan and sauté it for a few minutes until it becomes fragrant and the         oil begins to separate.

5. Seasoning:

   - Add sugar and a pinch of salt to the sautéed mixture. Stir well to combine.

   - Continue to cook the sambal for a few more minutes, stirring occasionally.

6. Taste and Adjust:

   - Taste the sambal and adjust the seasoning according to your preference. You can add more salt,             sugar, or lime juice if needed.

7. Cool and Store:

   - Allow the sambal terasi to cool down before transferring it to a clean, airtight container.

   - Store the sambal in the refrigerator. It can be used as a condiment to spice up various dishes.

Remember, sambal terasi is quite spicy due to the chili peppers, so adjust the amount of chili peppers based on your heat tolerance. Enjoy your homemade sambal terasi with dishes like grilled meats, fried rice, or even as a dipping sauce for vegetables!
